Chicken with Amaretto Honey Sauce

Serves: 4

4 Chicken Breasts
6 Tbsp. RBJ's Whipped Amaretto Honey
8 Tbsp. Non-Fat Dairy Creamer
Fresh Chopped Parsley (optional)

Sautee Chicken Breasts with PAM cooking spray in a non-stick pan until really browned.  Place sauteed Chicken into a small baking dish and place in a preheated 350 degree oven.

In the non-stick pan heat the RBJ's Amaretto Honey, then add the Non-Fat Dairy Creamer.  Whip it together well, reduced to a thick sauce (about 30 seconds).  All the moisture will evaporate as soon as the Dairy Creamer hits the pan, but it will leave a very smooth sauce, be sure to whip the mixture constantly.

Pour the creamy mixture over the Chicken, continue baking for 10 minutes.  Garnish with Parsley if desired.

Notes:

When the Non-Fat Dairy Creamer hits the hot pan, you have to really stir it to avoid scalding.

When it is reduced by 1/2 it makes a nice creamy style sauce.

This recipe is Low Fat, practically No Cholesterol, and Great Tasting!
