Apple Spiced Honey Chicken

Serves: 2

2 small Chicken Breasts without skin
     (You may use Cornish Game Hen if desired)
1/2 cup each:
   3/8" diced Onions
   3/8" diced Carrots
   3/8" diced Celery
   3/8" sliced Mushrooms
4 Tbsp. RBJ's Apple Spiced Honey
1 baking Apple, cored, quartered and heated
1/2 tsp. Sea Salt
1/4 tsp. ground White Pepper
Onion Powder
2 cups Chicken Broth
2 Tbsp. heated Sweet Cream Butter (no salt)
1 cup Wild Rice

Prep Chicken (or Cornish Game Hens) in suitable covered baking dish.  Mix the following together well: Rice, Onions, Carrots, Celery, Mushrooms, Chicken Broth, and Sea Salt.  Arrange Fowl on top of mixture skin side up.  Brush Fowl and Apples with mixture of heated Butter & RBJ's Apple Spiced Honey.  Lightly dust Fowl with Onion Powder.  Cover and bake at 350 degrees for 40 minutes, remove cover, add Apples to dish and continue to bake for 30 minutes or until meat is cooked.  Serve from baking dish.  Garnish with a nice bunch of Italian Leaf Parsley.  Serve with Chardonnay or Mosel Wine.
