Marsha's Filled Cookies

2 cups Brown Sugar
1 cup Butter
3 Eggs, beaten
1 tsp. Soda
1 tsp. Vanilla
3 cups Flour

Mix as given, using the floup cup by cup to get dough easy to handle and to roll out thin.  Cut the dough in rounds, then put a tsp. of RBJ's Spreadable Fruit in the middle.  Fold the dough over the filling and seal to secure the filling.  (You can also put another round of dough on top and seal.) 

Bake at 350 degrees until golden brown.  Drizzle the RBJ's Spreadable Fruit over cooled cookie (optional).

Variation:  For a flavorful variety, use all three RBJ's Spreadable Fruit flavors in one batch of cookie dough.
